A couple weeks ago I decided to try and make some pan de muerto. I have been making my own bread for a couple years now and I'm pretty confident when it comes to sourdough bread, but I haven't used yeast for the longest time and haven't made sweet bread or things like that.
This bread making session started bad... I went to get my groceries and forgot to buy the flour... I had to go to a tiendita to get some. Then I forgot to proof the yeast and after preparing the dough it never raised... I tried saving it with some sourdough starter, but I didn't have much, so I had to feed it and use it prematurely. I left my bread rising over night with the premature sourdough and it barely raised.
I thought it wasn't going to work... so I just left it there since I had plans to go out hiking again. My plan was to be back at around 12pm, but it was a longer hike and got back at around 4pm, lol. Well, the damn thing raised... I was prepared to try and salvage it by making something like some short bread or cookies or whatever could be done with it.
I prepared it and left it to raise a couple hours more and at night I baked it... it came pretty good for all the errors I made... hell, it came better than I expected even if I didn't screw up, lol. Next week I think I'll try making some more for some friends.
All in all, I think I'm pretty decent bread maker and luckily I have never had complains... except from the mom of a friend that left the bread outside and got way too hard, lol
